The story of this dish
Raita is one of the most basic accompaniments of the Indian subcontinent: yogurt combined with vegetables or fruit and spices. The origin of the name is uncertain; one theory links it to "rai", the Hindi word for black mustard seed, which some traditional recipes indeed use.
Its main job is to cool and balance spicy, chilli-hot dishes. There are versions with cucumber, tomato, onion, potato and even boondi, tiny fried chickpea-flour pearls. It is a distant cousin of Turkish cacık and Greek tzatziki, though usually made without garlic and kept thicker.
