The story of this dish
Chana masala is a simple but deeply rooted dish built on chickpeas ("chana" in Hindi), one of the oldest crops of the Indian subcontinent. In Punjab it is often called "chole" and is an everyday staple.
After the Partition of India and Pakistan in 1947, Punjabi families who resettled in Delhi are often credited with popularising chole as street food, paired with puffy fried bhature bread. Today chana masala is a fixture of vegetarian menus in Indian restaurants around the world.
