The story of this dish
Pakora is the umbrella name for a family of fritters found all over the Indian subcontinent, called bhajji or bhajia in some regions. What they share is vegetables dipped in a spiced chickpea-flour batter and deep-fried. The name is thought to derive from a Sanskrit-rooted word meaning roughly "cooked lump".
In India pakoras are closely tied to the monsoon: eating them with a hot cup of masala chai on a rainy afternoon is a seasonal ritual for many families. There are endless versions, made with onion, potato, spinach, cauliflower or paneer.
