The story of this dish
Corn was a staple food of Native Americans long before Europeans arrived, and they made simple breads from cornmeal and water cooked over the fire. Early European settlers learned these techniques, and corn took the place of wheat where wheat was hard to grow.
Over time cornbread took on regional styles. In the South it is usually made with little or no sugar and baked in cast iron for a crisp crust, while in the North sweeter, more cake-like versions are common. This recipe takes a lightly sweet middle path.
