The story of this dish
The hamburger takes its name from the German city of Hamburg, after the chopped-beef steak that arrived in America with 19th-century German immigrants. Who first served a patty between two slices of bread is hotly disputed: towns and diners from Connecticut to Wisconsin, Texas and Ohio all claim the title, and none can be proven.
Early chains such as White Castle, founded in 1921, made the hamburger a cheap, fast everyday meal. Fast-food chains later carried it around the world, but for Americans a homemade burger off the backyard grill remains the taste of summer evenings and holidays.
