The story of this dish
Jjigae is the Korean name for a thick, stew-like soup that usually comes to the table in its cooking pot. Kimchi jjigae is perhaps the most common of them all, and it is often made precisely to use up kimchi that has become too sour to eat on its own.
The most classic version in Korea uses pork, but chamchi kimchi jjigae, made with canned tuna, is an equally loved and practical home dish. This recipe uses beef or tuna.
