The story of this dish
Japchae means "mixed vegetables". According to a well-known story, it was first prepared by a court official for a banquet held for King Gwanghaegun in the early 17th century and greatly pleased the king. That original japchae had no noodles at all, only vegetables and mushrooms.
The sweet potato glass noodles that now define the dish were added in the early 20th century. Today japchae is a festive dish found on the table at birthdays, holidays and weddings.
