The story of this dish
Bulgogi means "fire meat" in Korean and is traditionally grilled over an open flame. Many sources trace its ancestry to maekjeok, a skewered meat dish associated with the ancient Goguryeo kingdom, although the link is not certain.
During the Joseon era, thinly sliced marinated meat was a luxury of aristocratic tables. Today bulgogi is a favorite both at home and in Korean barbecue restaurants, where it is grilled at the table. In Korea bulgogi is also made with pork; this recipe uses beef.
