The story of this dish
The most popular story of the brownie's origin says it was created at Chicago's Palmer House hotel around the 1893 World's Columbian Exposition, when a dessert easy to pack into a lunch box was requested. The tale is widely repeated but hard to verify; what is certain is that brownie recipes began appearing in American cookbooks at the very start of the 20th century.
The name simply comes from their brown color. Over time a friendly rivalry grew between cakey and fudgy brownies, and this recipe firmly sides with the dense, fudgy camp.
