The story of this dish
Dan dan mian is a street food from Sichuan province in China, especially its capital Chengdu. It is named after the "dan", the carrying pole that street vendors balanced on their shoulders: noodles and sauce hung at one end and a pot of boiling water or broth at the other, and vendors walked the streets selling small bowls.
The original Sichuan version is usually served with little liquid in small portions, with ya cai (fermented mustard greens) and crisp-fried pork mince. Restaurants in the West popularised saucier versions rich with peanuts and sesame. This home version uses beef instead of pork and suggests tahini as an easy-to-find alternative to Chinese sesame paste.
