The story of this dish
In India, dal is the name both for dried pulses such as lentils and split peas and for the dish made from them, and it is part of the daily meal in almost every region. Cheap, nourishing and an important source of protein for a largely vegetarian population, it has been a staple for centuries.
"Tadka" (also called tarka, chhaunk or baghaar, depending on the region) is the technique of briefly frying spices in hot fat and pouring them over a dish. It transfers the spices' aroma into the fat and turns plain lentils into something special. Dal tadka is a classic of the dhabas, the roadside eateries of North India.
