The story of this dish
Dakgalbi is closely tied to the city of Chuncheon in South Korea's Gangwon province. By most accounts it was born in small Chuncheon eateries in the 1960s and 70s as a cheap alternative to pricey grilled beef ribs (galbi), and quickly became popular with soldiers and university students. "Dak" means chicken and "galbi" means ribs, so the name is a playful "chicken galbi".
Today Chuncheon has whole streets devoted to dakgalbi, usually cooked on a large cast-iron pan in the middle of the table with staff keeping an eye on it. For many, the fried rice (bokkeumbap) made in the leftover sauce is the best part of the meal.
