The story of this dish
Chow mein is the Western rendering of a Cantonese phrase meaning "stir-fried noodles". Frying noodles in oil with vegetables and meat is an old and widespread technique in China, and every region has its own take.
The dish traveled west with workers and cooks from southern China who emigrated to the United States in the 19th century, and over time became one of the best-known dishes in Chinese restaurants abroad. Today there are two main styles: soft noodles tossed in sauce, and a crispy version where the noodles are fried into a pancake and topped with the stir-fry.
