The story of this dish
Beef and broccoli took shape more in Chinese restaurants in America than in China itself. In Cantonese cooking, beef is commonly stir-fried in oyster sauce with gai lan, or Chinese broccoli, which has thinner stems and more leaves. Although it is not certain, the dish is generally thought to have emerged in the 20th century when Cantonese cooks who had emigrated to the United States swapped in Western broccoli where gai lan was hard to find.
