The story of this dish
Spring rolls (chun juan) are associated with the Spring Festival, the Chinese New Year that celebrates the arrival of spring. They are thought to descend from thin "spring pancakes" (chun bing) wrapped around the season's first fresh vegetables; over time these were rolled up and fried, giving us the crisp rolls we know today.
