The story of this dish
Arroz con leche is one of Spain's best-loved home desserts and is especially associated with Asturias in the north. There it is usually cooked very slowly for a long time, and before serving the top is sprinkled with sugar and caramelised with a hot iron.
Rice reached the Iberian Peninsula with the Arabs during the al-Andalus period, and milk-and-rice desserts are thought to have spread through the region under that influence. That makes arroz con leche a close relative of Turkish sütlaç and many other milk puddings of the Middle East. Spain, and Latin America after it, made this version scented with cinnamon stick and lemon peel its own.
