The story of this dish
"Aloo" means potato and "gobi" cauliflower in Hindi. This simple, satisfying dish comes from home cooking in the Punjab region of northern India and Pakistan, and is a typical "sabzi", a vegetable dish cooked with little water so it stays dry rather than saucy.
Curiously, both main ingredients are relatively recent arrivals in India: the potato came from the Americas and cauliflower from the Mediterranean world, settling into Indian cooking only over the last few centuries. The dish became especially well known in Britain after featuring in the 2002 film "Bend It Like Beckham", about a Punjabi family in London.
