The story of this dish
The origins of sticky toffee pudding are uncertain, and several stories compete. The best known credits Francis Coulson, chef at the Sharrow Bay hotel in the Lake District, who put it on his menu in the 1970s and made it famous. He is said to have got the recipe from an acquaintance, who in turn had learned it from Canadian servicemen during the Second World War.
Whoever invented it, the pudding quickly became a winter classic in British pubs and restaurants. It is still closely associated with the Lake District, where the village of Cartmel is also known for its own version.
