The story of this dish
Pizza was born on the crowded streets of Naples as cheap, filling food for working people. In the 18th and 19th centuries the city's pizzaioli baked flatbreads in wood-fired ovens topped with tomato, garlic, cheese or anchovies and sold them on the street.
According to the best-known story, when Queen Margherita visited Naples in 1889, the pizzaiolo Raffaele Esposito made her a pizza in the colors of the Italian flag: red tomato, white mozzarella and green basil. Historians debate the details, and similar pizzas existed before then, but the name stuck and the Margherita became the world's favorite pizza.
