The story of this dish
Pesto alla genovese is the emblem of Liguria, in northwestern Italy, and its capital Genoa. The name comes from the Italian verb “pestare”, to pound or crush, because it is traditionally made in a marble mortar with a wooden pestle.
Crushed sauces of garlic and cheese are ancient in the Mediterranean, but basil pesto as we know it appears in Genoese cookbooks from the mid-19th century. In Liguria it is most often served with trofie, a short twisted local pasta, frequently cooked together with potatoes and green beans.
