The story of this dish
Despite its name, melanzane alla parmigiana is not generally considered a dish of Parma; Sicily and Naples (Campania) both claim it. The origin of the name is debated too: some say it refers to the Parmigiano cheese scattered over it, others to the Sicilian word "parmiciana", describing the slats of a window shutter, which the overlapping eggplant slices resemble.
What is clear is that the eggplant reached Italy through Arab traders and the period of Arab rule in Sicily, and became one of the south's favourite vegetables. The tomato-sauced version we know today came later, once tomatoes had settled into Italian cooking. It remains a classic Sunday and family-gathering bake across southern Italy.
