The story of this dish
Panna cotta means “cooked cream” in Italian and is usually associated with Piedmont in the northwest. Although it is listed among the region's traditional foods, little is known for certain about its origins, and the modern recipe seems to have become common in written sources only relatively late, in the 20th century.
Set cream desserts are old in European cooking, and the French blancmange is a close relative. Panna cotta spread around the world with Italian restaurants in the late 20th century, and its simplicity has made it a classic that pairs well with fruit, caramel or coffee.
