The story of this dish
Minestrone is the augmentative of “minestra”, Italian for soup, so it roughly means “big soup” — one packed with ingredients. There is no fixed recipe: it is made with rice in the north, finished with a spoonful of pesto in Liguria and with pasta and beans elsewhere.
It is a classic of “cucina povera”, the peasant kitchen, where whatever the garden offered that season went into the pot. Many ingredients now considered essential, such as tomatoes, potatoes and beans, only arrived from the Americas after the 16th century, so today's minestrone is a soup that has evolved over centuries.
