The story of this dish
Focaccia takes its name from the Latin "panis focacius", bread baked in the ashes of the hearth (focus). Flat, oiled breads have been made around the Mediterranean since ancient times, and almost every Italian region has its own focaccia.
The focaccia of Genoa, capital of Liguria, is the best known: thin, generous with olive oil, with a salty, dimpled top. The Genoese eat it not only with meals but also at breakfast, and dipping fresh morning focaccia into milky coffee is a well-known local habit.
