The story of this dish
Bread and butter pudding is the British answer to stale bread. Cooking bread with milk and eggs is an old idea, and recipes resembling this layered, buttered version begin to appear in English cookery books of the 18th century.
Long regarded as a humble school and nursery dessert, it found its way onto restaurant menus in the late 20th century in richer versions made with brioche and cream. Some recipes soak the raisins in brandy or rum; this alcohol-free version simply plumps them in warm water or orange juice.
