The story of this dish
Bruschetta comes from the peasant cooking of central Italy, especially Lazio, Tuscany and Umbria. Its name derives from the Roman dialect verb "bruscare", to toast over coals. In Tuscany the plain version with only garlic and oil is called "fettunta".
Tradition holds that it was born at olive harvest time, when stale bread was toasted over the fire to taste the freshly pressed oil. The tomato version became the most popular later on, and is now a symbol of Italian starters around the world.
