The story of this dish
Welsh rarebit first appears in English sources in the early 18th century as "Welsh rabbit". There is no rabbit in it at all; the name is generally thought to be an English joke at the expense of the Welsh, implying that toasted cheese was the poor man's meat. "Rarebit" is a later alteration, probably meant to make the name sound more respectable.
Classic recipes bind the cheese with ale or stout. Our home version uses milk instead, with mustard and Worcestershire sauce supplying the sharpness. Topped with a poached egg, the dish becomes what the British call a "buck rarebit".
