The story of this dish
Using carrots in sweet dishes is nothing new. When sugar was scarce and expensive, cooks in Europe used naturally sweet vegetables such as carrots to sweeten puddings and cakes. In Britain carrot desserts enjoyed a revival during Second World War rationing, when official campaigns promoted the carrot as a versatile vegetable that could even go into sweets.
